Brie and Jam Phyllo Triangles

Yields 18 Triangles


Brie cheese and jam tucked into phyllo dough to make an irresistibly flaky and cheesy Holiday appetizer.  This recipe is a choose your own adventure and you can adjust the fillings to your liking. Check out the substitution options for some ideas!  My favorite thing about this easy app is once you can get the triangles all prepped out you can toss them into the freezer, giving you homemade appetizers that can be baked at any time!


Ingredients

1 roll (1/2 package) of Phyllo Dough, defrosted

3 ounces Brie Cheese, cut into 1-inch squares (totaling 18 pieces)

3 Tablespoons raspberry jam or jam of your choice

3 sprigs rosemary or fresh thyme stripped from stem and roughly chopped

4 tablespoons melted butter

Substitutions

This easy appetizer can be customized to whatever you like! Substitute the brie with goat, blue or ricotta. Don’t like jam? No problem! Add a sliver of apple, pear or fig, a piece of prosciutto and top with honey or Mike’s hot honey. The world is your phyllo triangle, alter however you see fit!!

Directions

Preheat your oven to 375 degrees.

Unroll your defrosted phyllo dough and cover with a damp kitchen towel or paper towel to prevent it from drying out.

Lay one sheet of dough on a cutting board. Brush on a light coat of melted butter using pastry brush or the back of a spoon. Top with another sheet of dough, coat with butter and repeat with one more layer (totaling 3 layers). Cut the dough lengthwise in thirds.

Place one piece of brie cheese, 1/2 teaspoon of raspberry jam and a sprinkle of fresh herbs about 1-inch from the bottom of one section of dough. Fold dough over top of the filling to form a triangle. Continue to fold, maintaining the triangle shape until the end of the dough is reached. (Like folding a flag). Repeat with the other two strips of dough. Place on a baking sheet covered with parchment paper or tinfoil lightly sprayed with cooking oil or a silicone baking sheet.

Repeat with the remaining dough and filling.

Brush triangles with a light coating of butter. Bake until the triangles are golden brown, 12-15 minutes. Serve on a platter or plate with fresh herbs and enjoy!

Freezing Option

These phyllo triangles freeze beautifully and allow you to have a homemade delish app at your fingertips at all times! Prep out your triangles and instead of baking right away, just place onto a baking sheet in a single layer and stick in the freezer.  Once frozen, you can remove them from the baking sheet and place them in a freezer safe ziplock bag.  When you are ready to use just remove them from the freezer, place on a baking sheet lined with parchment paper or tinfoil lightly sprayed with cooking oil.  Brush triangles with a light coating of melted butter. Bake at 375 degrees for 20-25 minutes until golden brown.
