Balsamic Marinated Tomatoes & Burrata

Nothing says summer quite like fresh tomatoes, mozzarella and basil! Pair that with grilled ciabatta bread and you have an ideal summer starter, no cooking required! This dish is perfect for summer entertaining as you can prep and marinate the tomatoes before anyone arrives and toss it together in just a few minutes!



Ingredients

1 package of burrata

1 pint cherry tomatoes, halved 

2 tablespoons balsamic vinegar

3 tablespoons olive oil

2 cloves garlic

1 tablespoon dijon

1 tablespoon honey

Salt, pepper

3 tablespoons basil, chopped+more for garnish 

Directions

Combine vinegar, oil, Dijon, honey, salt/pepper and garlic in a large bowl and whisk to combine and emulsify.  Add halved cherry tomatoes and basil, toss to combine. Season generously with salt. Cover with plastic wrap and let sit at room temperature tossed occasionally for 30 minutes to an hour. 

Scoop cherry tomatoes out with slotted spoon and place on a platter. Scatter burrata on-top of tomatoes.  Spoon remaining sauce over the tomatoes and burrata. Top with basil, flaky or corse salt and fresh cracked pepper. To be served with fresh grilled ciabatta bread.
